I am the Public Relations Manager for the Siena Hotel & Il Palio Ristorante in Chapel Hill, NC. This European boutique hotel, opened in 1987, was inspired by a Tuscan villa and has been AAA Four Diamond since 1989. Il Palio is the only AAA Four Diamond Italian restaurant in the state. Executive Chef Adam Rose and Sommelier Hailey Rose are a dynamic husband and wife team who met at CIA in Hyde Park. Chef Rose has made strong relationships with the local farmers and artisan food purveyors, which has enabled him to put only the freshest ingredients on his plates. Pasta is made in house, fresh foccacia is baked daily, fish are local or flown in from the Adriatic on ice, never frozen. Pork and beef are grass fed and local, duck and hens from local source as well. Recently we hosted area SKAL and Chef's meal received rave reviews.
Menu: Chilled Lobster Salad, Shaved Fenell, Fresee and Pomegranate Vinaigrette, Greco, Cantina del Taburno, 2005, Campania; Seared Foie Gras, Duck Agnolotti, Brandied Cherries and Cherry Vincotto Sauce, Vino Nobile di Montepulciano, Avignonesi, 2004, Tuscany; Grilled Porcini Dusted Black Angus Strip Steak, Sweet Potato Gratinata and Barolo Sauce, Barolo, Gianfranco Alessandria, 2001, Monforte d'Alba; Passion Fruit Tart, Italian Meringue and Minted Raspberry Compote.
